Anti-Inflammatory Diet: In this module attendees will learn about the relationship between foods, advanced glycation end products, and free radicals. We will review the evidence about the role of diet in heart disease, stroke, COPD, cancer, Alzheimer’s, diabetes, and kidney failure, as well as the inflammatory pathways and where food fits in it. We will also present the evidence showing a relationship between advanced glycation end products, free radicals, and degenerative disorders.

Learning Objectives

1.    Explain the relationship between foods, advanced glycation end products, and free radicals.

2.    Describe how the foods eaten in a Western diet cause chronic inflammation.

3.    Explain the role of diet in heart disease, stroke, COPD, cancer, Alzheimer’s, diabetes, and kidney failure.  

4.    Describe the differences between a Mediterranean diet and the anti-inflammatory diet.

5.    Discuss inflammatory pathways and where foods fit in.

6.    Describe the evidence showing a relationship between advanced glycation end products, free radicals, and degenerative disorders.

7.    Identify what is a proper omega-3 to omega-6 ratio and why.

8.    Describe the positive data supporting an anti-inflammatory diet.

9.    Identify which foods are pro-inflammatory and anti-inflammatory foods that can replace them.

10.    Describe the role healthcare practitioners can have in improving disorders connected to chronic inflammation through dietary interventions.

11.    Demonstrate the ability to counsel patients on choosing a healthy balance of macronutrients.

12.    Identify sources of omega-3 fatty acids and omega-6 fatty acids.

13.    Describe why advanced glycation end products and free radicals are bad for the body.

14.    State why certain foods can improve symptoms of chronic inflammation.
