Module 10: Cancer Prevention 9/25/23
Overview
This module focuses on the effect that diet can have, both preventatively and post diagnosis, on cancer patients. We Will examine certain foods and antioxidants linked to cancer risk reduction, with a focus on phytochemical and their common sources; also discussed is the role of obesity and alcohol consumption in certain types of cancer. We outline dietary support and counseling strategies during cancer treatment and prepare plant-based, antioxidant rich recipes in the kitchen.

Learning Objectives
1. Describe the impact health care practitioners may have on disease prevention through diet intervention.
2. Discuss phytochemicals and their role in anti-oxidation, immune system health, anti-inflammatory properties, cellular repair and disease prevention.
3. Discuss the role of obesity in incidence of cancer.
4. Explain the impact of alcohol consumption on cancer risk, especially the effects of over-consumption.
5. Discuss the alteration of micronutrients based on cooking methods.
6. Identify food sources of phytochemicals.
7. Describe patient counseling strategies to support consumption of beneficial fats.
8. Describe counseling strategies to support fruit and vegetable consumption.
9. Identify strategies for dietary support during chemotherapy or radiation therapy including texture and temperature factors.
